Irreversibly stripping data of anything that could identify a person — after which the GDPR no longer applies.
Anonymised data cannot be linked back to an individual by any reasonably likely means. Because no one is identifiable, truly anonymous data falls outside the GDPR.
The bar is high: if re-identification is reasonably possible, the data is only pseudonymised and the GDPR still applies (see Recital 26).
